Description
A quick and delicious Garlic Butter Steak & Potatoes Skillet recipe that combines tender steak and golden potatoes in a rich garlic butter sauce.

- 1 lb (450 g) sirloin steak (or ribeye/strip), sliced into strips
- 1 1/2 lbs (680 g) baby potatoes or Yukon golds, quartered
- 4 tbsp unsalted butter, divided
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 1 tsp fresh rosemary (or 1/2 tsp dried)
- Salt & black pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Heat 2 tbsp olive oil and 1 tbsp butter in a large cast-iron skillet over medium-high heat.
- Add potatoes, season with salt, pepper, and half the herbs. Cook 10–12 minutes, stirring occasionally, until golden and fork-tender. Remove potatoes from skillet and set aside.
- In the same skillet, add 1 tbsp olive oil and 1 tbsp butter. Season steak strips generously with salt and pepper. Sear for 2–3 minutes per side until browned but still juicy inside. Add garlic and remaining herbs, cooking for 1 more minute.
- Return potatoes to skillet. Add remaining 2 tbsp butter. Toss everything together until steak and potatoes are coated in garlicky butter. Garnish with fresh parsley.
Notes
- For a spicier kick, add red pepper flakes to the steak while cooking.
- Ensure the skillet is hot enough before adding the steak for a good sear.
- Feel free to substitute the herbs based on your preference.
