Description

A quick and delicious Garlic Butter Steak & Potatoes Skillet recipe that combines tender steak and golden potatoes in a rich garlic butter sauce.


Ingredients

Scale
  • 1 lb (450 g) sirloin steak (or ribeye/strip), sliced into strips
  • 1 1/2 lbs (680 g) baby potatoes or Yukon golds, quartered
  • 4 tbsp unsalted butter, divided
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 tsp fresh rosemary (or 1/2 tsp dried)
  • Salt & black pepper, to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tbsp olive oil and 1 tbsp butter in a large cast-iron skillet over medium-high heat.
  2. Add potatoes, season with salt, pepper, and half the herbs. Cook 10–12 minutes, stirring occasionally, until golden and fork-tender. Remove potatoes from skillet and set aside.
  3. In the same skillet, add 1 tbsp olive oil and 1 tbsp butter. Season steak strips generously with salt and pepper. Sear for 2–3 minutes per side until browned but still juicy inside. Add garlic and remaining herbs, cooking for 1 more minute.
  4. Return potatoes to skillet. Add remaining 2 tbsp butter. Toss everything together until steak and potatoes are coated in garlicky butter. Garnish with fresh parsley.

Notes

  • For a spicier kick, add red pepper flakes to the steak while cooking.
  • Ensure the skillet is hot enough before adding the steak for a good sear.
  • Feel free to substitute the herbs based on your preference.
