- 28 Oreo cookies (with cream)
- 6 tbsp (85g) melted unsalted butter
- 24 oz (680g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 1 cup (240ml) heavy cream
- 3 large eggs (room temp)
- 1 tsp vanilla extract
- 1 tbsp cornstarch
- ½ cup crushed Oreo pieces (optional swirl)
- 1 cup mango puree (fresh or store-bought)
- 2 tbsp sugar
- 1 tsp vanilla
- 1 tsp lemon juice
- 1 tsp cornstarch + 1 tsp water (slurry)
- Whipped cream
- Whole Oreos
Instructions
- Make the Crust: Crush Oreos into fine crumbs. Mix with melted butter until evenly coated. Press into the bottom of a springform pan. Bake at 350°F (175°C) for 8 minutes. Let cool.
- Make the Cheesecake Filling: Beat cream cheese + sugar until completely smooth. Add heavy cream and vanilla → mix until silky. Add eggs one at a time, mixing gently (no overbeating). Add cornstarch and mix only until combined. Fold in crushed Oreos (optional). Pour into cooled crust.
- Bake: Place pan in a water bath (prevents cracks). Bake at 300°F (150°C) for 60–75 minutes, until the center jiggles slightly. Turn off oven, leave cheesecake inside 1 hour. Chill at least 4 hours, best overnight.
- Make the Golden Drizzle: In a saucepan: mango puree, sugar, vanilla, lemon juice. Heat gently. Add cornstarch slurry and stir until thick, glossy, and pourable. Cool completely before drizzling.
- Assemble: Pour golden mango sauce slowly along cake edges to create the drip. Add whipped cream swirls on top. Finish with whole Oreos.
