Ingredients

  • 2 ½ cups (310g) all-purpose flour
  • 1 cup (225g) cold unsalted butter, cubed
  • 1 tsp salt
  • 1 tsp sugar
  • 68 tbsp ice-cold water
  • 67 medium apples (Granny Smith + Honeycrisp mix is best), peeled & sliced
  • ½ cup (100g) brown sugar
  • ½ cup (100g) white sugar
  • 2 tbsp lemon juice
  • 1 tsp cinnamon
  • ¼ tsp nutmeg (optional)
  • ¼ tsp salt
  • 3 tbsp cornstarch
  • 3 tbsp butter
  • 1 egg + 1 tbsp milk (for egg wash)
  • Optional: Warm caramel sauce for drizzling

Instructions

  1. Make the Crust: In a bowl, mix flour, salt, and sugar. Add cold butter and use fingertips or a pastry cutter to blend until crumbly. Add cold water slowly until dough comes together. Divide into two discs, wrap, and refrigerate 45–60 minutes.
  2. Prepare the Filling: In a large pot over medium heat, melt 3 tbsp butter. Add apples, sugars, lemon juice, cinnamon, nutmeg, and salt. Cook 5–7 minutes until apples soften slightly. Sprinkle in cornstarch and stir until mixture thickens into a glossy caramel. Remove from heat and let cool.
  3. Assemble: Preheat oven to 200°C (400°F). Roll first dough disc and place into pie dish. Fill with cooled apple caramel filling. Roll second dough disc and cut into strips to make a lattice pattern on top. Brush with egg wash for glossy golden color.
  4. Bake: Bake at 200°C (400°F) for 20 minutes. Reduce heat to 175°C (350°F) and bake 30–35 more minutes, until golden and bubbling.
  5. Optional Finish: Let cool 1 hour so the filling sets. Drizzle with warm caramel sauce for extra shine and flavor.
