Delicious and easy-to-make Golden Puff Pastry Sausage Rolls, perfect for parties or snacks.

- 500 g (1 lb) sausage meat (or good-quality sausages with casings removed)
- 1 small onion, finely diced (optional)
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp thyme (or mixed herbs)
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp salt (adjust depending on sausage seasoning)
- 2 tbsp breadcrumbs (optional, for texture)
- 1 sheet puff pastry (thawed if frozen)
- 1 egg (beaten, for egg wash)
- 1 tsp sesame seeds or poppy seeds (optional topping)
Instructions
- In a bowl, combine sausage meat, onion, garlic, parsley, thyme, paprika, pepper, and breadcrumbs. Mix until evenly blended.
- Preheat oven to 200°C (400°F). Roll out puff pastry into a rectangle. Cut into 2 long strips.
- Spoon sausage mixture in a log down the center of each strip. Fold pastry over the filling, sealing edges with water.
- Flip seam-side down and cut into 6–8 pieces each. Brush tops with egg wash and sprinkle seeds if using.
- Place rolls on a lined baking tray. Bake for 20–25 minutes, until puffed and golden brown. Cool slightly before serving.
Notes
- Feel free to customize the filling with your favorite herbs and spices.
- These rolls can be made ahead of time and frozen before baking.
- Serve with your favorite dipping sauce for added flavor.
