- 12 fully cooked breakfast sausages (or smoked sausage links)
- 1 ½ cups pancake batter (store-bought mix or homemade)
- 2 tbsp melted butter (for brushing)
- Oil or butter for cooking
- ½ cup pure maple syrup
- 1 tbsp butter
- Optional: pinch cinnamon or crushed red pepper (for spicy-sweet)
Instructions
- Slice sausages into 1 to 1.5 inch bite-size pieces. If using raw sausage, cook fully first — they must be 100% cooked before battering.
- You can use any pancake mix — just mix to the usual spoonable consistency. Not too thin or it won’t cling to sausages. Add 1 tsp vanilla and pinch cinnamon for extra flavor (optional but delicious).
- Option A — Skillet Method: Heat a nonstick skillet over medium heat. Lightly oil or butter the surface. Dip each sausage piece into batter → place into pan. Cook 1–2 minutes per side until golden brown. Brush lightly with melted butter when done. Option B — Mini Muffin Tin: Preheat oven to 400°F (200°C). Add ½ tablespoon batter to each mini muffin cup. Add a sausage bite → top with a little more batter. Bake 8–10 minutes until risen and golden.
- In a small bowl, warm maple syrup + butter together. Add cinnamon or chili if desired. Stir until glossy.
- Stack them high on a plate and pour the maple drizzle slowly over the top. Eat warm. They disappear fast.

- For cheesy savory comfort, add cheddar cheese jewels inside the batter.
