Deliciously gooey cookies filled with lemon curd and topped with a sweet glaze, perfect for lemon lovers.

- ½ cup (113 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- Zest of 1 lemon
- 1 large egg
- 1 ½ cups (190 g) all-purpose flour
- 1 tbsp poppy seeds
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup lemon curd (store-bought or homemade)
- ½ cup powdered sugar
- 1–2 tsp lemon juice (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, beat butter, sugar, and lemon zest until light and fluffy. Add egg and mix well.
- In another bowl, whisk flour, baking powder, salt, and poppy seeds. Gradually add to wet mixture until dough comes together.
- Scoop about 1 tablespoon of dough and flatten slightly. Place ½ teaspoon lemon curd in the center. Top with another small piece of dough, sealing edges carefully. Repeat with remaining dough.
- Place cookies on prepared sheet, spacing apart. Bake 10–12 minutes, until lightly golden at edges. Cool on a wire rack.
- Mix powdered sugar with lemon juice to make a thin glaze. Drizzle over cooled cookies.
Notes
- For a stronger lemon flavor, use homemade lemon curd.
- Ensure cookies are completely cool before glazing to prevent melting.
