Description

Deliciously gooey cookies filled with lemon curd and topped with a sweet glaze, perfect for lemon lovers.


Ingredients

  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • Zest of 1 lemon
  • 1 large egg
  • 1 ½ cups (190 g) all-purpose flour
  • 1 tbsp poppy seeds
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup lemon curd (store-bought or homemade)
  • ½ cup powdered sugar
  • 12 tsp lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, beat butter, sugar, and lemon zest until light and fluffy. Add egg and mix well.
  3. In another bowl, whisk flour, baking powder, salt, and poppy seeds. Gradually add to wet mixture until dough comes together.
  4. Scoop about 1 tablespoon of dough and flatten slightly. Place ½ teaspoon lemon curd in the center. Top with another small piece of dough, sealing edges carefully. Repeat with remaining dough.
  5. Place cookies on prepared sheet, spacing apart. Bake 10–12 minutes, until lightly golden at edges. Cool on a wire rack.
  6. Mix powdered sugar with lemon juice to make a thin glaze. Drizzle over cooled cookies.

Notes
