Description

A comforting and hearty lasagna soup that combines all the flavors of traditional lasagna in a warm, delicious bowl.


Ingredients

  • 1 lb ground beef (or Italian sausage)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef or chicken broth
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp crushed red pepper flakes (optional)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 810 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Fresh basil or parsley for garnish

Instructions

  1. In a large pot, cook ground beef over medium-high heat until browned. Add diced onion and garlic, sauté until softened. Drain excess grease.
  2. Stir in crushed tomatoes, tomato sauce, broth, tomato paste, and seasonings. Bring to a boil, then reduce to low heat.
  3. Stir in broken lasagna noodles. Simmer for 15–20 minutes, stirring occasionally, until noodles are tender.
  4. In a bowl, combine ricotta, mozzarella, Parmesan, and Italian seasoning.
  5. Ladle soup into bowls. Top each serving with a generous spoonful of cheese mixture. Garnish with fresh basil or parsley.

Notes

  • Feel free to substitute ground beef with Italian sausage for a different flavor.
  • Adjust the level of crushed red pepper flakes based on your spice preference.
