A comforting and hearty lasagna soup that combines all the flavors of traditional lasagna in a warm, delicious bowl.

- 1 lb ground beef (or Italian sausage)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups beef or chicken broth
- 2 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- ½ tsp crushed red pepper flakes (optional)
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 8–10 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Fresh basil or parsley for garnish
Instructions
- In a large pot, cook ground beef over medium-high heat until browned. Add diced onion and garlic, sauté until softened. Drain excess grease.
- Stir in crushed tomatoes, tomato sauce, broth, tomato paste, and seasonings. Bring to a boil, then reduce to low heat.
- Stir in broken lasagna noodles. Simmer for 15–20 minutes, stirring occasionally, until noodles are tender.
- In a bowl, combine ricotta, mozzarella, Parmesan, and Italian seasoning.
- Ladle soup into bowls. Top each serving with a generous spoonful of cheese mixture. Garnish with fresh basil or parsley.
Notes
- Feel free to substitute ground beef with Italian sausage for a different flavor.
- Adjust the level of crushed red pepper flakes based on your spice preference.
- This soup can be made ahead of time and reheated for a quick meal.
