- 1 cup all-purpose flour
- ½ cup semolina (for texture, optional)
- 1 tsp baking powder
- ½ tsp baking soda
- Pinch of salt
- 2 large eggs
- ½ cup sugar
- ½ cup plain yogurt (or sour cream)
- ⅓ cup vegetable oil (or melted butter)
- 1 tsp vanilla extract
- ½ tsp ground cinnamon (optional)
- ½ cup chopped walnuts (lightly toasted)
- ½ cup honey
- ¼ cup sugar
- ½ cup water
- 1 tsp lemon juice
Instructions
- In a saucepan, combine honey, sugar, and water. Bring to a gentle boil, stir, and simmer 5 minutes until slightly thickened. Add lemon juice, stir, and set aside to cool.
- In a bowl, whisk flour, semolina, baking powder, baking soda, salt, and cinnamon. In another bowl, beat eggs and sugar until pale and fluffy. Mix in yogurt, oil, and vanilla. Fold dry ingredients into wet, then stir in walnuts.
- Preheat oven to 350°F (175°C). Grease a silicone honeycomb mold (or mini muffin pan). Spoon batter into molds, filling ¾ full. Bake 15–18 minutes until golden and firm.
- While still warm, drizzle or dip each cake bite into honey syrup. Let absorb for 10 minutes.
- Garnish with extra walnuts on top. Serve warm or at room temperature, with tea or coffee.
