Ingredients

  • ½ cup (120 ml) water
  • ½ cup (120 ml) milk (or use all water)
  • ½ cup (113 g) unsalted butter
  • 1 tbsp sugar
  • ½ tsp salt
  • 1 cup (125 g) all-purpose flour
  • 4 large eggs
  • 1 cup (240 ml) milk (for filling)
  • 3 large egg yolks
  • ½ cup (100 g) sugar (for filling)
  • 3 tbsp cornstarch
  • ¼ cup (60 ml) fresh lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp (28 g) unsalted butter (for filling)
  • 1 cup (240 ml) cold heavy cream
  • 2 tbsp powdered sugar (for whipped cream)
  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil.
  3. Reduce heat to low, add flour all at once, and stir vigorously until the mixture forms a ball and pulls away from the sides (about 1–2 minutes).
  4. Remove from heat and let cool 5 minutes.
  5. Beat in eggs one at a time until smooth and glossy.
  6. Transfer to a piping bag fitted with a large round tip. Pipe 2-inch mounds onto prepared sheet.
  7. Bake for 20–25 minutes until puffed and golden. Cool completely.
  8. In a saucepan, whisk milk, egg yolks, sugar, and cornstarch until smooth.
  9. Cook over medium heat, stirring constantly, until thickened.
  10. Remove from heat and whisk in lemon juice, zest, and butter until smooth.
  11. Transfer to a bowl, cover with plastic wrap directly on the surface, and refrigerate until chilled.
  12. In a chilled bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  13. Slice cooled puffs in half horizontally.
  14. Pipe or spoon lemon filling into the bottom half.
  15. Add a swirl of whipped cream and place the top half back on.
  16. Dust with powdered sugar before serving.
