Description
Golden, cheesy quesadillas stuffed with seasoned beef and onions, served with all your favorite dips. A crowd-pleaser for parties, game nights, or family dinners!

- 500 g (1 lb) ground beef
- 1 tbsp olive oil
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade mix)
- ½ cup water
- Salt & pepper to taste
- 6 large flour tortillas
- 3 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 2 tbsp butter (for frying, optional)
- Guacamole (for serving)
- Sour cream (for serving)
- Salsa (for serving)
- Pico de gallo (for serving)
- Diced onions & cilantro (for serving)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and cook until softened.
- Stir in garlic and ground beef, breaking it apart until browned.
- Mix in taco seasoning and water. Simmer until thickened. Set aside.
- Heat a large skillet or griddle over medium heat.
- Place a tortilla on the skillet, sprinkle cheese, add a layer of beef filling, then more cheese. Top with another tortilla.
- Cook until golden brown and cheese is melted (about 2–3 minutes per side). Repeat with remaining tortillas and filling.
- Cut each quesadilla into wedges.
- Arrange on a platter with guacamole, sour cream, salsa, pico de gallo, and diced onions.
Notes
- Feel free to customize the fillings with your favorite ingredients.
- For extra flavor, add jalapeños or bell peppers to the beef filling.
- These quesadillas can be made ahead of time and reheated before serving.
