Description

Golden English muffin halves topped with savory sausage, crispy bacon, melted cheese, and perfectly baked eggs — these mini breakfast pizzas are gooey, hearty, and totally irresistible!


Ingredients

  • 4 English muffins, split in half (8 halves total)
  • 1 tbsp olive oil or melted butter (for brushing)
  • ½ lb (225 g) breakfast sausage (or ground pork)
  • 4 strips bacon, cooked and chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 8 small eggs (or 4 if using whole English muffins)
  • ¼ cup pizza or marinara sauce (optional)
  • 1 tbsp chopped parsley (for garnish)
  • Salt & pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange English muffin halves on a parchment-lined baking sheet.
  3. Brush each half lightly with olive oil or butter. Toast in the oven for 5 minutes to crisp slightly.
  4. In a skillet over medium heat, cook sausage until browned. Drain excess fat and set aside. Mix in crumbled bacon for added flavor.
  5. Spread a small spoonful of pizza or marinara sauce over each toasted muffin (optional). Sprinkle a little mozzarella and cheddar. Add a spoonful of the sausage-bacon mixture on top. Create a small well in the center of each pizza and crack one small egg into it. Season lightly with salt and pepper.
  6. Bake for 10–12 minutes, or until the egg whites are set but yolks are still slightly runny. For firmer yolks, bake an extra 2 minutes.
  7. Sprinkle with chopped parsley or chives for freshness. Serve hot and enjoy the gooey, cheesy, savory perfection!
