- 4 English muffins, split in half (8 halves total)
- 1 tbsp olive oil or melted butter (for brushing)
- ½ lb (225 g) breakfast sausage (or ground pork)
- 4 strips bacon, cooked and chopped
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 8 small eggs (or 4 if using whole English muffins)
- ¼ cup pizza or marinara sauce (optional)
- 1 tbsp chopped parsley (for garnish)
- Salt & pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange English muffin halves on a parchment-lined baking sheet.
- Brush each half lightly with olive oil or butter. Toast in the oven for 5 minutes to crisp slightly.
- In a skillet over medium heat, cook sausage until browned. Drain excess fat and set aside. Mix in crumbled bacon for added flavor.
- Spread a small spoonful of pizza or marinara sauce over each toasted muffin (optional). Sprinkle a little mozzarella and cheddar. Add a spoonful of the sausage-bacon mixture on top. Create a small well in the center of each pizza and crack one small egg into it. Season lightly with salt and pepper.
- Bake for 10–12 minutes, or until the egg whites are set but yolks are still slightly runny. For firmer yolks, bake an extra 2 minutes.
- Sprinkle with chopped parsley or chives for freshness. Serve hot and enjoy the gooey, cheesy, savory perfection!
