Description

Loaded Plantain Boats are a delicious fusion of Latin-inspired comfort food featuring roasted sweet plantains stuffed with savory taco-style beef, melted cheese, and fresh toppings.


Ingredients

  • 4 ripe plantains (yellow with black spots)
  • 2 tbsp olive oil or butter, melted
  • Pinch of salt
  • 1 lb ground beef (or shredded pork/chicken)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade mix)
  • ½ cup tomato sauce or salsa
  • 1 cup shredded mozzarella or Mexican blend cheese
  • ½ cup diced tomatoes
  • ½ cup diced mango (optional, for sweetness)
  • Sour cream or crema drizzle
  • Fresh cilantro, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Slice plantains lengthwise down the middle, being careful not to cut through the bottom. Brush with olive oil or butter and sprinkle with salt. Place on a baking sheet and bake for 20–25 minutes until soft and golden.
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant. Stir in beef, cooking until browned. Add taco seasoning and tomato sauce; simmer 5 minutes until thickened.
  3. Gently press the center of each roasted plantain to create space. Fill with taco meat, then sprinkle with cheese. Return to oven for 5–7 minutes until cheese is melted.
  4. Add diced tomatoes, mango, sour cream drizzle, and cilantro. Serve warm with guacamole on the side.
