Louisiana Voodoo Fries are a delicious and bold dish featuring crispy fries topped with a creamy Cajun cheese sauce, crispy bacon bits, and fresh green onions.

- 1 bag (1 lb / 450 g) frozen French fries (or homemade)
- Oil, for frying (or bake/air fry option)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 ½ cups whole milk (warm)
- 1 cup shredded cheddar cheese
- ½ cup Monterey Jack cheese
- 2 tbsp cream cheese
- 1 tsp Cajun seasoning (add more for extra heat)
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Pinch of cayenne (optional)
- Salt & black pepper, to taste
- ½ cup crispy bacon bits
- ¼ cup green onions, chopped
- Extra Cajun seasoning (to sprinkle on top)
Instructions
- Deep fry, bake, or air fry fries until golden and crispy. Keep warm.
- In a saucepan, melt butter over medium heat.
- Whisk in flour to make a roux, cooking 1–2 minutes.
- Slowly add warm milk while whisking until smooth.
- Reduce heat, stir in cheddar, Monterey Jack, and cream cheese until melted.
- Season with Cajun seasoning, garlic powder, paprika, cayenne, salt, and pepper.
- Place fries on a serving platter.
- Pour warm Cajun cheese sauce generously over fries.
- Top with crispy bacon bits and chopped green onions.
- Serve immediately with extra Cajun seasoning sprinkled on top for that Louisiana kick.
Notes
- For a vegetarian option, omit the bacon bits.
- Adjust the level of Cajun seasoning to suit your heat preference.
