  • 1 tsp lime juice
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening, if needed)

  • Toasted coconut flakes

Instructions

  1. Make the Crust: Combine graham cracker crumbs, melted butter, and sugar. Press mixture firmly into bottom of tart pan. Chill in fridge for at least 20 minutes.
  2. Prepare Cheesecake Filling: Beat cream cheese, granulated sugar, and vanilla until smooth. In a separate bowl, whip heavy cream with powdered sugar to stiff peaks. Fold whipped cream into cream cheese mixture until light and fluffy. Spread evenly over chilled crust.
  3. Make Mango Topping: In a saucepan, combine mango puree, diced mango, sugar, and lime juice. Heat gently until slightly thickened. Add cornstarch slurry if needed. Cool slightly, then spoon over cheesecake layer.
  4. Assemble & Chill: Smooth topping evenly, arranging extra diced mango decoratively. Chill at least 4 hours or overnight to set.
  5. Garnish & Serve: Top with whipped cream swirls, toasted coconut, and fresh mint. Slice and serve cold with a squeeze of lime.
