- 2 packages (8 oz each) cream cheese, softened

- 1 cup heavy cream (cold)
- 2 tbsp powdered sugar
- Mango Topping
- 2 large ripe mangoes, diced (plus extra for garnish)
- ½ cup mango puree
- 2 tbsp sugar (optional, depending on sweetness of mango)
- 1 tsp lime juice
- 1 tbsp cornstarch mixed with 2 tbsp water (for thickening, if needed)

Instructions
- Make the Crust: Combine graham cracker crumbs, melted butter, and sugar. Press mixture firmly into bottom of tart pan. Chill in fridge for at least 20 minutes.
- Prepare Cheesecake Filling: Beat cream cheese, granulated sugar, and vanilla until smooth. In a separate bowl, whip heavy cream with powdered sugar to stiff peaks. Fold whipped cream into cream cheese mixture until light and fluffy. Spread evenly over chilled crust.
- Make Mango Topping: In a saucepan, combine mango puree, diced mango, sugar, and lime juice. Heat gently until slightly thickened. Add cornstarch slurry if needed. Cool slightly, then spoon over cheesecake layer.
- Assemble & Chill: Smooth topping evenly, arranging extra diced mango decoratively. Chill at least 4 hours or overnight to set.
- Garnish & Serve: Top with whipped cream swirls, toasted coconut, and fresh mint. Slice and serve cold with a squeeze of lime.
