Description

Mile-High Banana Pudding Pound Cake is a decadent dessert that combines the rich, buttery texture of a classic pound cake with the nostalgic flavors of banana pudding, topped with creamy frosting, banana slices, and vanilla wafer.

  • 2 ½ cups granulated sugar
  • 6 large eggs, room temperature
  • 3 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup whole milk (or buttermilk)
  • 2 tsp vanilla extract
  • 2 ripe bananas, mashed
  • 8 oz (225 g) cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tbsp heavy cream (or milk)
  • 1 tsp vanilla extract
  • 2 ripe bananas, sliced (for garnish)
  • 1 cup crushed vanilla wafers (for garnish)
  • Whole vanilla wafers for decoration

Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour a bundt pan or tube pan.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Add dry ingredients to wet mixture alternately with milk.
  6. Stir in vanilla extract and mashed bananas.
  7. Pour batter into prepared pan and bake for 70–80 minutes, or until a toothpick inserted comes out clean.
  8. Cool completely before frosting.
  9. Beat cream cheese and butter until smooth.
  10. Add powdered sugar gradually, mixing well.
  11. Add heavy cream and vanilla extract, beating until fluffy.
  12. Frost cooled pound cake generously with cream cheese frosting.
  13. Garnish with banana slices, crushed vanilla wafers, and whole wafers around the edges.
