Description

Mini Chocolate Chip Ice Cream Sandwiches are a delightful treat combining soft cookies and creamy vanilla ice cream, perfect for any occasion.


Ingredients

  • 1 cup (225 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 3/4 cup (150 g) brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/4 cups (280 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups (340 g) semi-sweet chocolate chips
  • 1 pint (2 cups / 475 ml) vanilla ice cream, slightly softened
  • 1 cup mini chocolate chips (for rolling the edges)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in eggs and vanilla until smooth.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet ingredients.
  5. Stir in chocolate chips.
  6. Drop small spoonfuls of dough (about 1 tbsp each) onto baking sheets.
  7. Bake 8–10 minutes, until golden around the edges but soft in the center.
  8. Cool completely on wire racks.
  9. Place a scoop of softened vanilla ice cream between two cookies.
  10. Gently press together until ice cream reaches the edges.
  11. Roll the edges in mini chocolate chips for a fun finish.
  12. Place sandwiches on a tray and freeze at least 1–2 hours until firm.
  13. Enjoy straight from the freezer for a cold, chewy, and chocolaty treat!
