- 1 cup (225 g) unsalted butter, softened
- 3/4 cup (150 g) granulated sugar
- 3/4 cup (150 g) brown sugar, packed
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/4 cups (280 g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups (340 g) semi-sweet chocolate chips
- 1 pint (2 cups / 475 ml) vanilla ice cream, slightly softened
- 1 cup mini chocolate chips (for rolling the edges)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until fluffy.
- Beat in eggs and vanilla until smooth.
- In a separate bowl, whisk flour, baking soda, and salt. Gradually add to wet ingredients.
- Stir in chocolate chips.
- Drop small spoonfuls of dough (about 1 tbsp each) onto baking sheets.
- Bake 8–10 minutes, until golden around the edges but soft in the center.
- Cool completely on wire racks.
- Place a scoop of softened vanilla ice cream between two cookies.
- Gently press together until ice cream reaches the edges.
- Roll the edges in mini chocolate chips for a fun finish.
- Place sandwiches on a tray and freeze at least 1–2 hours until firm.
- Enjoy straight from the freezer for a cold, chewy, and chocolaty treat!
