Description

Mini Peach Pies are delightful bite-sized desserts filled with sweet peaches, perfect for summer gatherings.


Ingredients

  • 1 package refrigerated pie crusts (2 crusts), or homemade pie dough
  • Nonstick spray or butter (for greasing muffin tin)
  • 2 cups fresh peaches, peeled and diced (or canned, drained well)
  • ¼ cup granulated sugar
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • Pinch of salt
  • ½ cup powdered sugar (for glaze, optional)
  • 12 tbsp milk (for glaze, optional)
  • ½ tsp vanilla extract (for glaze, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a muffin tin.
  2. Roll out pie crusts and cut into 4–5 inch circles.
  3. Gently press circles into each muffin cup to form mini pie shells.
  4. In a bowl, combine peaches, sugars, cornstarch, cinnamon, lemon juice, and salt.
  5. Toss until peaches are well coated.
  6. Spoon peach mixture evenly into the pie crusts.
  7. Optional: Cut extra crust into strips or shapes to decorate the tops.
  8. Bake for 18–22 minutes, or until crusts are golden brown and filling is bubbly.
  9. Let cool slightly in the pan before removing.
  10. Whisk powdered sugar, milk, and vanilla until smooth. Drizzle glaze over cooled mini pies.

Notes

  • For a richer flavor, use ripe, fresh peaches.
  • These pies can be served warm or at room temperature.
  • Store leftovers in an airtight container in the refrigerator.
