Mini Peach Pies are delightful bite-sized desserts filled with sweet peaches, perfect for summer gatherings.
Ingredients

- 1 package refrigerated pie crusts (2 crusts), or homemade pie dough
- Nonstick spray or butter (for greasing muffin tin)
- 2 cups fresh peaches, peeled and diced (or canned, drained well)
- ¼ cup granulated sugar
- 1 tbsp brown sugar
- 1 tbsp cornstarch
- ½ tsp cinnamon
- 1 tsp lemon juice
- Pinch of salt
- ½ cup powdered sugar (for glaze, optional)
- 1–2 tbsp milk (for glaze, optional)
- ½ tsp vanilla extract (for glaze, optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a muffin tin.
- Roll out pie crusts and cut into 4–5 inch circles.
- Gently press circles into each muffin cup to form mini pie shells.
- In a bowl, combine peaches, sugars, cornstarch, cinnamon, lemon juice, and salt.
- Toss until peaches are well coated.
- Spoon peach mixture evenly into the pie crusts.
- Optional: Cut extra crust into strips or shapes to decorate the tops.
- Bake for 18–22 minutes, or until crusts are golden brown and filling is bubbly.
- Let cool slightly in the pan before removing.
- Whisk powdered sugar, milk, and vanilla until smooth. Drizzle glaze over cooled mini pies.
Notes
- For a richer flavor, use ripe, fresh peaches.
- These pies can be served warm or at room temperature.
- Store leftovers in an airtight container in the refrigerator.
