- 4 large eggs
- ½ cup granulated sugar
- ½ cup all-purpose flour
- ¼ cup cocoa powder
- ½ tsp baking powder
- ¼ tsp salt
- 2 tbsp vegetable oil
- 2 tbsp milk
- 1 tsp vanilla extract
- 1 ½ cups heavy whipping cream
- ½ cup powdered sugar
- 1 tsp peppermint extract
- Green food coloring (optional)
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
- Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- Beat eggs and sugar until thick and pale.
- In another bowl, whisk flour, cocoa powder, baking powder, and salt.
- Gently fold dry ingredients into egg mixture. Stir in oil, milk, and vanilla.
- Spread batter evenly in pan. Bake 10–12 minutes, until springy to the touch.
- While warm, turn cake out onto a kitchen towel dusted with powdered sugar.
- Peel off parchment and roll cake up in the towel from the short end. Let cool completely.
- Whip heavy cream with powdered sugar until soft peaks form.
- Add peppermint extract and a few drops of green food coloring. Whip to stiff peaks.
- Unroll cooled cake, spread mint cream evenly over surface.
- Roll back up tightly and refrigerate for at least 1 hour.
- Heat cream until steaming, pour over chocolate chips. Let sit 2 minutes, then stir until smooth.
- Drizzle glaze generously over roll-ups before serving.
Notes
- Ensure the cake is completely cool before adding the mint filling to prevent it from melting.
- For a more intense mint flavor, adjust the peppermint extract to taste.
- Store any leftovers in the refrigerator for up to 3 days.
