Description

Mint Chocolate Roll-Ups are a delightful dessert featuring a chocolate sponge cake filled with a creamy mint filling and topped with a rich chocolate glaze.


Ingredients

  • 4 large eggs
  • ½ cup granulated sugar
  • ½ cup all-purpose flour
  • ¼ cup cocoa powder
  • ½ tsp baking powder
  • ¼ tsp salt
  • 2 tbsp vegetable oil
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1 ½ cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp peppermint extract
  • Green food coloring (optional)
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. Beat eggs and sugar until thick and pale.
  3. In another bowl, whisk flour, cocoa powder, baking powder, and salt.
  4. Gently fold dry ingredients into egg mixture. Stir in oil, milk, and vanilla.
  5. Spread batter evenly in pan. Bake 10–12 minutes, until springy to the touch.
  6. While warm, turn cake out onto a kitchen towel dusted with powdered sugar.
  7. Peel off parchment and roll cake up in the towel from the short end. Let cool completely.
  8. Whip heavy cream with powdered sugar until soft peaks form.
  9. Add peppermint extract and a few drops of green food coloring. Whip to stiff peaks.
  10. Unroll cooled cake, spread mint cream evenly over surface.
  11. Roll back up tightly and refrigerate for at least 1 hour.
  12. Heat cream until steaming, pour over chocolate chips. Let sit 2 minutes, then stir until smooth.
  13. Drizzle glaze generously over roll-ups before serving.

  • Ensure the cake is completely cool before adding the mint filling to prevent it from melting.
  • For a more intense mint flavor, adjust the peppermint extract to taste.
