- 1 box lemon cake mix (15.25 oz / 432 g)
- 1 cup Mountain Dew (instead of water)
- ½ cup vegetable oil
- 3 large eggs
- 1 tbsp lemon zest (optional, for extra zing)
- 1 cup (230 g) unsalted butter, softened
- 4 cups (480 g) powdered sugar
- ¼ cup Mountain Dew (adjust for consistency)
- 1 tsp lemon or lime zest
- Green and yellow gel food coloring (for swirl effect)
- Sprinkles (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, combine cake mix, Mountain Dew, oil, eggs, and lemon zest. Beat on medium speed for 2 minutes until smooth.
- Fill cupcake liners about ⅔ full. Bake for 18–20 minutes, or until a toothpick inserted comes out clean. Let cool completely before frosting.
- In a mixing bowl, beat butter until light and fluffy. Gradually add powdered sugar, 1 cup at a time.
- Mix in Mountain Dew and zest until smooth and creamy. Divide frosting into two bowls—tint one green, the other yellow.
- Spoon side by side into a piping bag to create a swirl effect. Pipe frosting onto cooled cupcakes in a tall swirl.
- Add sprinkles for a fizzy, soda-inspired touch.
