- 2 cups peanut butter sandwich cookies, crushed (Nutter Butter or similar)
- 5 tbsp unsalted butter, melted
- 8 oz (225g) cream cheese, softened
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups heavy cream, whipped or 1 tub whipped topping
- 1 ½ cups chocolate chips (semi-sweet or milk)
- ¾ cup heavy cream
- 1 tbsp butter (for shine)
- Optional: Whipped cream swirls, crushed cookies, chocolate curls
Instructions
- Make the Crust: Mix crushed cookies + melted butter until sandy. Press firmly into the bottom of an 8×8 inch or 9×9 inch dish. Chill while you make the filling.
- Make the Peanut Butter Cream Layer: Beat cream cheese + peanut butter until smooth. Add powdered sugar + vanilla — mix again. Fold in whipped cream (or whipped topping) until silky and fluffy. Spread evenly over the chilled crust.
- Make the Chocolate Topping: Heat heavy cream until steaming. Pour over chocolate chips and let sit 1 minute. Stir until glossy and smooth. Add butter to finish the shine. Pour over peanut butter layer and smooth gently.
- Chill: Refrigerate at least 4 hours (overnight = perfect slice + clean layers).
- Finish: Garnish with whipped cream swirls or extra cookie crumbs.
