- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 ½ cups graham cracker crumbs (or digestive biscuits)
- ¼ cup rainbow sprinkles
- 2 cups white chocolate chips (or candy melts)
- 1 tbsp coconut oil (optional, for smoother melting)
- Extra rainbow sprinkles (for topping)
- Drizzle of melted white chocolate (for topping)
Instructions
- In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth.
- Stir in graham cracker crumbs until well combined.
- Gently fold in rainbow sprinkles.
- Scoop out about 1 tablespoon of mixture and roll into balls.
- Place them on a baking sheet lined with parchment paper.
- Freeze for 20–30 minutes until firm.
- Melt white chocolate chips with coconut oil in the microwave (20-second intervals) or over a double boiler until smooth.
- Dip each chilled ball into melted chocolate, letting excess drip off.
- Place back onto parchment paper.
- Drizzle extra melted chocolate on top.
- Immediately sprinkle with rainbow sprinkles before the coating sets.
- Refrigerate for at least 1 hour before serving.
- Store in an airtight container in the fridge for up to 5 days.
