Description

Creamy, bite-sized cheesecake truffles with sprinkles inside, coated in white chocolate, and topped with even more rainbow fun. Perfect for birthdays, parties, or anytime you want a cheerful, no-bake treat!


Ingredients

  • 8 oz (226 g) cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups graham cracker crumbs (or digestive biscuits)
  • ¼ cup rainbow sprinkles
  • 2 cups white chocolate chips (or candy melts)
  • 1 tbsp coconut oil (optional, for smoother melting)
  • Extra rainbow sprinkles (for topping)
  • Drizzle of melted white chocolate (for topping)

Instructions

  1. In a mixing bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth.
  2. Stir in graham cracker crumbs until well combined.
  3. Gently fold in rainbow sprinkles.
  4. Scoop out about 1 tablespoon of mixture and roll into balls.
  5. Place them on a baking sheet lined with parchment paper.
  6. Freeze for 20–30 minutes until firm.
  7. Melt white chocolate chips with coconut oil in the microwave (20-second intervals) or over a double boiler until smooth.
  8. Dip each chilled ball into melted chocolate, letting excess drip off.
  9. Place back onto parchment paper.
  10. Drizzle extra melted chocolate on top.
  11. Immediately sprinkle with rainbow sprinkles before the coating sets.
  12. Refrigerate for at least 1 hour before serving.
  13. Store in an airtight container in the fridge for up to 5 days.
