No-Bake Pecan Pie Balls are a delicious and easy-to-make sweet treat that combines the flavors of pecan pie in a bite-sized form, coated in chocolate.

- 1 ½ cups (150 g) pecans, finely chopped or pulsed in a food processor
- 1 cup (90 g) graham cracker crumbs (or digestive biscuit crumbs)
- ½ cup (120 ml) light corn syrup (or maple syrup for a natural version)
- ¼ cup (60 g) brown sugar
- 1 tsp vanilla extract
- ¼ tsp salt
- 1 tbsp melted butter
- 200 g (7 oz) semi-sweet chocolate chips or dark chocolate, chopped
- 1 tsp coconut oil or vegetable oil (for smooth melting)
Instructions
- In a large bowl, combine chopped pecans, graham cracker crumbs, brown sugar, and salt.
- Stir in corn syrup (or maple), melted butter, and vanilla extract.
- Mix until the texture is sticky but moldable. If too dry, add 1–2 teaspoons of extra syrup.
- Scoop out about 1 tablespoon of mixture at a time and roll into balls.
- Place on a parchment-lined baking sheet.
- Chill in the refrigerator for 30 minutes to firm up.
- Melt chocolate chips and coconut oil together in a heatproof bowl over simmering water (or in 20-second microwave bursts).
- Using a fork or skewer, dip each chilled ball into the melted chocolate and place back on parchment.
- Drizzle any remaining chocolate on top for decoration.
- Refrigerate until set, about 15–20 minutes.
Notes
- For a natural version, substitute light corn syrup with maple syrup.
- Ensure the chocolate is fully melted for a smooth coating.
- Store in an airtight container in the refrigerator for up to a week.
