Description

No-Bake Pecan Pie Balls are a delicious and easy-to-make sweet treat that combines the flavors of pecan pie in a bite-sized form, coated in chocolate.


Ingredients

  • 1 ½ cups (150 g) pecans, finely chopped or pulsed in a food processor
  • 1 cup (90 g) graham cracker crumbs (or digestive biscuit crumbs)
  • ½ cup (120 ml) light corn syrup (or maple syrup for a natural version)
  • ¼ cup (60 g) brown sugar
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 tbsp melted butter
  • 200 g (7 oz) semi-sweet chocolate chips or dark chocolate, chopped
  • 1 tsp coconut oil or vegetable oil (for smooth melting)

Instructions

  1. In a large bowl, combine chopped pecans, graham cracker crumbs, brown sugar, and salt.
  2. Stir in corn syrup (or maple), melted butter, and vanilla extract.
  3. Mix until the texture is sticky but moldable. If too dry, add 1–2 teaspoons of extra syrup.
  4. Scoop out about 1 tablespoon of mixture at a time and roll into balls.
  5. Place on a parchment-lined baking sheet.
  6. Chill in the refrigerator for 30 minutes to firm up.
  7. Melt chocolate chips and coconut oil together in a heatproof bowl over simmering water (or in 20-second microwave bursts).
  8. Using a fork or skewer, dip each chilled ball into the melted chocolate and place back on parchment.
  9. Drizzle any remaining chocolate on top for decoration.
  10. Refrigerate until set, about 15–20 minutes.

Notes

  • For a natural version, substitute light corn syrup with maple syrup.
  • Ensure the chocolate is fully melted for a smooth coating.
  • Store in an airtight container in the refrigerator for up to a week.
