Delicious and cheesy buffalo chicken pizza pockets, perfect for a quick dinner or snack.

- 2 cups cooked chicken, shredded
- ½ cup buffalo sauce (adjust to spice preference)
- 1 tbsp ranch or blue cheese dressing (optional)
- 1 sheet puff pastry (or pizza dough), thawed
- 1 ½ cups shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 1 egg (for egg wash)
- 1 tbsp butter, melted
- ½ tsp garlic powder
- ½ tsp parsley flakes (fresh or dried)
Instructions
- In a bowl, mix shredded chicken with buffalo sauce and ranch/blue cheese (if using). Set aside.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Roll out puff pastry or pizza dough into rectangles. Cut into 6 equal pieces.
- Place a spoonful of buffalo chicken in the center of each dough rectangle. Sprinkle with mozzarella and cheddar cheese. Fold dough over to enclose filling, sealing edges with a fork. Brush tops with egg wash.
- Bake 18–20 minutes, until golden brown and puffed. Brush with melted butter mixed with garlic powder. Sprinkle with parsley and extra cheese.
- Serve hot with ranch or blue cheese dressing for dipping.
Notes
- Adjust the amount of buffalo sauce based on your spice preference.
- These pockets can be made ahead of time and frozen before baking.
- Serve with a side of celery sticks for a complete meal.
