A festive and delicious Patriotic Berry Flag Pie, perfect for celebrating national holidays.

- 2 pie crusts (store-bought or homemade)
- 1 egg (beaten, for egg wash)
- 3 cups fresh strawberries (hulled & halved)
- 2 cups fresh blueberries
- ½ cup granulated sugar
- 3 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- Extra pie dough for stars & stripes cutouts
- Sugar for sprinkling
Instructions
- Preheat oven to 400°F (200°C).
- Roll out one crust and fit into a 9-inch pie pan. Trim excess edges.
- In two separate bowls, mix strawberries with ¼ cup sugar, 1 ½ tbsp cornstarch, ½ tbsp lemon juice, and ½ tsp vanilla.
- In another bowl, mix blueberries with ¼ cup sugar, 1 ½ tbsp cornstarch, ½ tbsp lemon juice, and ½ tsp vanilla.
- Spoon blueberry mixture into the top left quarter of the pie (the “stars” section) and fill the rest with strawberry mixture (the “stripes” section).
- Roll out second crust and cut strips of dough for the stripes and small star shapes with a cookie cutter.
- Arrange the cutouts over the filling in a flag design.
- Brush stars and stripes with beaten egg and sprinkle lightly with sugar.
- Bake for 35–40 minutes, until golden brown and filling is bubbly. If edges brown too quickly, cover with foil.
- Let pie cool for at least 2 hours to set before serving.
- Serve plain or with vanilla ice cream.
Notes
- Ensure the pie cools completely to allow the filling to set properly.
- For a sweeter pie, adjust the sugar according to taste.
- Can be made a day in advance and stored in the refrigerator.
