Description

A festive and delicious Patriotic Berry Flag Pie, perfect for celebrating national holidays.


Ingredients

Scale
  • 2 pie crusts (store-bought or homemade)
  • 1 egg (beaten, for egg wash)
  • 3 cups fresh strawberries (hulled & halved)
  • 2 cups fresh blueberries
  • ½ cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • Extra pie dough for stars & stripes cutouts
  • Sugar for sprinkling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out one crust and fit into a 9-inch pie pan. Trim excess edges.
  3. In two separate bowls, mix strawberries with ¼ cup sugar, 1 ½ tbsp cornstarch, ½ tbsp lemon juice, and ½ tsp vanilla.
  4. In another bowl, mix blueberries with ¼ cup sugar, 1 ½ tbsp cornstarch, ½ tbsp lemon juice, and ½ tsp vanilla.
  5. Spoon blueberry mixture into the top left quarter of the pie (the “stars” section) and fill the rest with strawberry mixture (the “stripes” section).
  6. Roll out second crust and cut strips of dough for the stripes and small star shapes with a cookie cutter.
  7. Arrange the cutouts over the filling in a flag design.
  8. Brush stars and stripes with beaten egg and sprinkle lightly with sugar.
  9. Bake for 35–40 minutes, until golden brown and filling is bubbly. If edges brown too quickly, cover with foil.
  10. Let pie cool for at least 2 hours to set before serving.
  11. Serve plain or with vanilla ice cream.

  • Ensure the pie cools completely to allow the filling to set properly.
  • For a sweeter pie, adjust the sugar according to taste.
  • Can be made a day in advance and stored in the refrigerator.
