Description

Delicious Piña Colada Cheesecake Bars that combine the tropical flavors of pineapple and coconut with a creamy cheesecake filling, perfect for any occasion.


Ingredients

  • 2 cups graham cracker crumbs (or digestive biscuits, finely crushed)
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 oz (450 g) cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup coconut milk (or heavy cream)
  • ½ cup crushed pineapple, drained
  • 1 cup pineapple juice
  • 2 tbsp sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • ½ cup crushed pineapple
  • ½ cup toasted shredded coconut
  • Whipped cream
  • Maraschino cherries

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press mixture firmly into the bottom of a greased or parchment-lined 9×9-inch baking pan.
  4. Bake for 8–10 minutes. Set aside to cool.
  5. In a large mixing bowl, beat cream cheese and sugar until smooth and creamy.
  6. Add eggs one at a time, mixing until just combined.
  7. Stir in vanilla, coconut milk, and crushed pineapple.
  8. Pour filling over the cooled crust.
  9. Bake for 30–35 minutes, until edges are set but the center is slightly jiggly.
  10. Let cool at room temperature, then refrigerate for at least 3–4 hours (or overnight).
  11. In a saucepan, combine pineapple juice and sugar. Bring to a simmer.
  12. Stir in cornstarch slurry and cook until thickened (about 2 minutes).
  13. Remove from heat and fold in crushed pineapple. Let cool completely.
  14. Spread pineapple topping evenly over the chilled cheesecake.
  15. Sprinkle with toasted coconut.
  16. Cut into bars and top each with whipped cream and a cherry.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
  • Make sure to drain the crushed pineapple well to avoid a soggy cheesecake.
  • These bars can be made a day in advance for better flavor.
