Ingredients

  • ½ cup brown sugar, packed
  • Pineapple rings (cut to fit donut cavities or use tidbits)
  • Maraschino cherries
  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream (or plain yogurt)
  • ¼ cup pineapple juice (from canned pineapple)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a donut pan well.
  2. Mix melted butter and brown sugar. Spoon about 1 tsp into the bottom of each donut cavity.
  3. Place a small piece of pineapple (or trimmed ring) and a cherry in each cavity.
  4. In a bowl, whisk flour, baking powder, baking soda, and salt.
  5. In another bowl, cream butter and sugar until fluffy.
  6. Add eggs one at a time, mixing well. Stir in vanilla.
  7. Mix in sour cream and pineapple juice.
  8. Gradually add dry ingredients until just combined (don’t overmix).
  9. Spoon batter over the pineapple topping in each donut cavity, filling about ¾ full.
  10. Bake for 15–18 minutes, or until golden and a toothpick comes out clean.
  11. Let cool 5 minutes, then carefully invert onto a wire rack or tray to reveal the caramelized pineapple tops.
  12. Best served warm with a scoop of vanilla ice cream 🍦.
  13. Store leftovers in an airtight container in the fridge for up to 3 days.
