Pineapple Upside-Down Donuts are a delightful twist on the classic dessert, featuring a caramelized pineapple topping and a moist donut base.

- ¼ cup unsalted butter, melted
- ½ cup brown sugar, packed
- Pineapple rings (cut to fit donut cavities or use tidbits)
- Maraschino cherries
- 1½ cups all-purpose flour
- 1½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream (or plain yogurt)
- ¼ cup pineapple juice (from canned pineapple)
Instructions
- Preheat oven to 350°F (175°C). Grease a donut pan well.
- Mix melted butter and brown sugar. Spoon about 1 tsp into the bottom of each donut cavity.
- Place a small piece of pineapple (or trimmed ring) and a cherry in each cavity.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until fluffy.
- Add eggs one at a time, mixing well. Stir in vanilla.
- Mix in sour cream and pineapple juice.
- Gradually add dry ingredients until just combined (don’t overmix).
- Spoon batter over the pineapple topping in each donut cavity, filling about ¾ full.
- Bake for 15–18 minutes, or until golden and a toothpick comes out clean.
- Let cool 5 minutes, then carefully invert onto a wire rack or tray to reveal the caramelized pineapple tops.
- Best served warm with a scoop of vanilla ice cream 🍦.
- Store leftovers in an airtight container in the fridge for up to 3 days.
