  • 1 tsp vanilla extract
  • 1 cup (240 ml) buttermilk
  • ½ cup (120 g) raspberry puree (blend fresh or frozen raspberries, strained)
  • 1 cup (125 g) fresh raspberries, tossed lightly in flour
  • 1 cup (230 g) unsalted butter, softened (for frosting)
  • 3 ½ cups (450 g) powdered sugar, sifted
  • ¾ cup (75 g) unsweetened cocoa powder
  • ½ tsp salt (for frosting)
  • ½ cup (120 ml) heavy cream (more if needed)
  • 2 tsp vanilla extract (for frosting)
  • Fresh raspberries (for garnish)
  • Chocolate shavings or curls (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla.
  5. Alternate adding dry ingredients with buttermilk and raspberry puree. Mix until just combined.
  6. Gently fold in raspberries.
  7. Divide batter evenly into pans and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
  8. Let cool completely before frosting.
  9. Beat butter until creamy for the frosting.
  10. Gradually add powdered sugar, cocoa powder, and salt.
  11. Mix in heavy cream and vanilla, beating until smooth and fluffy.
  12. Place one cake layer on a serving plate and spread frosting on top.
  13. Add the second layer and cover the entire cake with frosting.
  14. Smooth with a spatula or create swirls for texture.
  15. Garnish with fresh raspberries and chocolate curls.
