Description

These golden, flaky pastries are filled with a rich cream cheese filling and a vibrant raspberry topping. Simple yet elegant, they’re ideal for entertaining or satisfying a sweet craving with minimal effort.


Ingredients

  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Powdered sugar, for dusting
  • 225 g (8 oz) cream cheese, softened
  • ¼ cup (50 g) granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (optional)
  • 1 cup (120 g) raspberries (fresh or frozen)
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 1 tsp water

Instructions

  1. In a small saucepan, combine raspberries, sugar, and lemon juice over medium heat. Stir occasionally until the raspberries break down (about 5 minutes). Add the cornstarch slurry, stirring until the mixture thickens. Remove from heat and let cool completely.
  2. In a medium bowl, beat cream cheese, sugar, and vanilla until smooth and creamy. Add lemon zest if using. Set aside.
  3. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper. Roll out the puff pastry and cut into 9–12 equal squares. Place a spoonful of cream cheese filling in the center of each square. Top with a teaspoon of raspberry filling. Brush the edges with egg wash and fold corners toward the center (or leave open-faced).
  4. Bake for 15–18 minutes, or until golden brown and puffed. Let cool slightly on a wire rack.
  5. Dust with powdered sugar just before serving. Serve warm or at room temperature — perfect with coffee or tea!

  • For a richer flavor, consider adding a pinch of salt to the cream cheese filling.
