A delightful and refreshing raspberry cream dream tiramisu that combines layers of creamy mascarpone and fresh raspberries, perfect for any occasion.

- 2 cups heavy whipping cream, cold
- 1 ½ cups mascarpone cheese, cold
- ¾ cup powdered sugar
- 2 tsp vanilla extract
- Pinch of salt
- 3–4 cups fresh raspberries
- 1 cup raspberry jam (seedless if possible)
- ¼ cup water or lemon juice to thin jam slightly
- 1–2 packages ladyfingers (about 35–45 pieces)
- Extra fresh raspberries for finishing
- Powdered sugar for dusting
Instructions
- Prepare Raspberry Layer: In a bowl, combine raspberry jam and water (or lemon juice). Stir until it becomes a light sauce (spreadable, but not runny). Set aside with fresh raspberries.
- Make the Cream: In a large bowl, whip heavy cream until soft peaks. Add mascarpone, powdered sugar, vanilla, and salt. Continue whipping just until thick, smooth, and cloud-like. Do not overwhip — stop as soon as it’s stable and silky.
- Layer the Tiramisu: In a large trifle bowl, deep glass dish, or 9×13 pan, swirl raspberry sauce lightly across the bottom. Dip each ladyfinger quickly into the raspberry sauce (don’t soak — just 1 second). Arrange a full layer of dipped ladyfingers. Spread half the cream over them. Scatter fresh raspberries over the top. Repeat with remaining dipped ladyfingers and cream, smoothing the top beautifully.
- Chill: Cover and chill at least 4 hours. Overnight gives the luxury restaurant texture — the ladyfingers melt into the cream.
- Finish + Serve: Heap the top with fresh raspberries and dust generously with powdered sugar. Serve cold, in big soft scoops.
Notes
- For best results, chill overnight.
- Use seedless raspberry jam for a smoother texture.
