Description

Raspberry Cream Tartlets are delightful mini desserts featuring a buttery tart shell filled with a creamy custard and topped with fresh raspberries.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • ¼ cup granulated sugar
  • 1 egg yolk
  • 23 tbsp ice water
  • 1 cup milk
  • 3 tbsp sugar
  • 2 tbsp cornstarch
  • 1 egg yolk
  • ½ tsp vanilla extract
  • ½ cup heavy cream (whipped to soft peaks)
  • 12 drops red berry puree (raspberry or strawberry) for color/flavor (optional)
  • 1 ½ cups fresh raspberries
  • Whipped cream (piped swirls)
  • Powdered sugar (for dusting)
  • Fresh mint or thyme sprigs (optional garnish)

Instructions

  1. Make tartlet shells: In a bowl, combine flour and sugar. Cut in butter until crumbly. Add egg yolk and ice water, mixing until dough just comes together. Shape into a disk, wrap, and chill for 30 minutes. Roll out dough, cut circles, and press into tartlet pans. Prick bottoms with a fork. Bake at 350°F (175°C) for 12–15 minutes until golden. Cool completely.
  2. Make cream filling: Heat milk in a saucepan until warm. In a bowl, whisk sugar, cornstarch, and egg yolk. Slowly whisk in warm milk. Return mixture to saucepan and cook until thickened. Remove from heat, stir in vanilla. Let cool, then fold in whipped cream for a light texture. Chill before using.
  3. Assemble tartlets: Spoon cream filling into cooled tartlet shells. Arrange raspberries on top. Pipe whipped cream swirls and dust with powdered sugar. Garnish with fresh herbs if desired.
