Description

A creamy and flavorful dip made with roasted beets and feta cheese, perfect for parties or as a healthy snack.


Ingredients

  • 3 medium beets (roasted, peeled, and cooled)
  • 1 cup feta cheese (crumbled, plus extra for topping)
  • ½ cup Greek yogurt (or sour cream)
  • 2 tbsp olive oil (plus more for drizzling)
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 garlic clove (roasted or raw, minced)
  • 1 tsp honey (optional, for balance)
  • Salt & black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 45–60 minutes, until tender.
  2. Peel and let cool completely.
  3. In a food processor, combine roasted beets, feta, yogurt, olive oil, lemon juice, garlic, and honey.
  4. Blend until creamy and smooth. Adjust salt and pepper to taste.
  5. Transfer dip to a serving bowl.
  6. Drizzle with olive oil, sprinkle with extra feta crumbles, and garnish with fresh parsley.
