Ingredients

- 3 medium beets (roasted, peeled, and cooled)
- 1 cup feta cheese (crumbled, plus extra for topping)
- ½ cup Greek yogurt (or sour cream)
- 2 tbsp olive oil (plus more for drizzling)
- 2 tbsp lemon juice (freshly squeezed)
- 1 garlic clove (roasted or raw, minced)
- 1 tsp honey (optional, for balance)
- Salt & black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 45–60 minutes, until tender.
- Peel and let cool completely.
- In a food processor, combine roasted beets, feta, yogurt, olive oil, lemon juice, garlic, and honey.
- Blend until creamy and smooth. Adjust salt and pepper to taste.
- Transfer dip to a serving bowl.
- Drizzle with olive oil, sprinkle with extra feta crumbles, and garnish with fresh parsley.

- Serve with pita bread, crackers, crostini, or fresh veggies like carrots, celery, and cucumber.
