Description

Delicious and easy-to-make Rotel Sausage & Cream Cheese Croissant Bites, perfect for appetizers or snacks.

Ingredients

Scale
  • 1 lb (450 g) breakfast sausage (mild or spicy)
  • 1 can Rotel (10 oz / 280 g), drained (diced tomatoes with green chilies)
  • 8 oz (225 g) cream cheese, softened
  • 2 cans refrigerated crescent roll dough (or puff pastry for a flakier version)
  • 1 cup shredded cheddar cheese (optional, for extra cheesiness)
  • 1 egg, beaten (for egg wash)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a skillet over medium heat, cook sausage until browned and fully cooked.
  2. Drain excess grease.
  3. Stir in drained Rotel and cream cheese until melted and creamy.
  4. Let the mixture cool slightly.
  5. Preheat oven to 375°F (190°C).
  6. Roll out crescent roll dough (or puff pastry) and cut into squares or triangles, depending on size preference.
  7. Place a spoonful of sausage mixture in the center of each dough piece.
  8. Sprinkle shredded cheddar on top if using.
  9. Fold the dough over and pinch edges to seal, forming little bites or puffs.
  10. Arrange bites on a parchment-lined baking sheet.
  11. Brush tops with beaten egg for a golden finish.
  12. Bake 12–15 minutes (crescent dough) or 18–20 minutes (puff pastry), until golden brown.
  13. Garnish with chopped parsley.
  14. Serve warm as an appetizer, snack, or game-day party bite.

Notes

  • For a spicier version, use hot breakfast sausage.
  • These bites can be made ahead of time and frozen before baking.
