- 1 lb (450 g) breakfast sausage (mild or spicy)
- 1 can Rotel (10 oz / 280 g), drained (diced tomatoes with green chilies)
- 8 oz (225 g) cream cheese, softened
- 2 cans refrigerated crescent roll dough (or puff pastry for a flakier version)
- 1 cup shredded cheddar cheese (optional, for extra cheesiness)
- 1 egg, beaten (for egg wash)
- Fresh parsley, chopped (for garnish)
Instructions
- In a skillet over medium heat, cook sausage until browned and fully cooked.
- Drain excess grease.
- Stir in drained Rotel and cream cheese until melted and creamy.
- Let the mixture cool slightly.
- Preheat oven to 375°F (190°C).
- Roll out crescent roll dough (or puff pastry) and cut into squares or triangles, depending on size preference.
- Place a spoonful of sausage mixture in the center of each dough piece.
- Sprinkle shredded cheddar on top if using.
- Fold the dough over and pinch edges to seal, forming little bites or puffs.
- Arrange bites on a parchment-lined baking sheet.
- Brush tops with beaten egg for a golden finish.
- Bake 12–15 minutes (crescent dough) or 18–20 minutes (puff pastry), until golden brown.
- Garnish with chopped parsley.
- Serve warm as an appetizer, snack, or game-day party bite.
