- 1 lb (450 g) ground sausage (pork, chicken, or turkey)
- ½ small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup breadcrumbs
- 1 egg
- 2 tbsp fresh parsley, chopped (or 1 tsp dried herbs)
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt (adjust depending on sausage seasoning)
- 2 sheets puff pastry (thawed if frozen)
- 1 egg yolk (for egg wash)
- Optional garnish: sesame seeds, poppy seeds, or extra parsley
Instructions
- In a bowl, combine ground sausage, onion, garlic, breadcrumbs, egg, parsley, paprika, salt, and pepper. Mix until just combined (do not overmix).
- Roll out puff pastry sheets lightly on a floured surface. Cut each sheet in half lengthwise to create long strips.
- Place a log of sausage filling down the center of each pastry strip. Fold pastry over the sausage and seal edges by pressing with a fork. Slice into small rolls (2–3 inches each) and place seam-side down on a baking tray lined with parchment.
- Brush tops with beaten egg yolk for a golden finish. Bake at 400°F (200°C) for 20–25 minutes, until pastry is puffed and golden brown.
- Let cool slightly, sprinkle with fresh parsley, and serve warm with mustard, ketchup, or a dipping sauce of choice.

- For a spicier kick, consider adding red pepper flakes to the filling.
