Savory Spinach & Feta Cookies are a delicious twist on traditional cookies, featuring a flavorful filling of spinach and feta cheese wrapped in a soft dough.

- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp dried oregano (or mixed Italian herbs)
- ¼ cup unsalted butter (softened)
- ½ cup plain Greek yogurt (or sour cream)
- 1 large egg
- 1 cup fresh spinach, chopped (lightly sautéed if preferred)
- ½ cup feta cheese, crumbled
- ½ cup ricotta or cream cheese (optional, for creamier filling)
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1 egg yolk (for egg wash)
- 1 tbsp olive oil or melted butter
- 1 tsp dried parsley or oregano
Instructions
- In a bowl, mix spinach, feta, ricotta (if using), garlic, and olive oil. Season lightly with salt and pepper. Set aside.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and herbs. Add softened butter and rub with fingers until mixture resembles coarse crumbs. Stir in yogurt and egg, mixing until a soft dough forms. Do not overwork.
- Preheat oven to 180°C (350°F). Line a baking sheet with parchment. Roll dough into small balls (about golf-ball size). Flatten each ball, place 1–2 tsp of filling inside, and seal edges. Shape into discs and place on the baking sheet.
- Brush tops with egg yolk mixed with olive oil or butter. Sprinkle with parsley/oregano. Bake for 18–22 minutes, until golden brown and puffed.
- Enjoy warm with a yogurt dip, tzatziki, or a side of marinara sauce.
Notes
- For a creamier filling, add ricotta or cream cheese.
- These cookies can be served warm or at room temperature.
