Description

A delicious smoked meatloaf topped with a cheddar glaze, perfect for a flavorful meal.


Ingredients

  • 2 lbs ground beef (or a mix of beef & pork)
  • 1 cup breadcrumbs (panko or regular)
  • ½ cup milk
  • 2 large eggs
  • 1 small onion (finely diced)
  • 3 cloves garlic (minced)
  • ½ cup grated cheddar cheese
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp ketchup
  • 1 Tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp chili powder (optional for a kick)
  • 2 Tbsp fresh parsley (chopped)
  • ½ cup ketchup (for glaze)
  • 2 Tbsp brown sugar (for glaze)
  • 1 Tbsp apple cider vinegar (for glaze)
  • 1 tsp smoked paprika (for glaze)
  • 1 ½ cups shredded sharp cheddar cheese (for topping)
  • Fresh chives or parsley (for garnish)

Instructions

  1. Preheat your smoker to 250°F (120°C). Use wood chips like hickory, apple, or cherry for best flavor.
  2. In a small bowl, combine breadcrumbs and milk. Let it soak for 5 minutes.
  3. In a large bowl, mix ground meat, eggs, onion, garlic, Worcestershire, ketchup, mustard, paprika, salt, pepper, chili powder, and parsley.
  4. Add soaked breadcrumbs and mix gently until just combined (don’t overwork the meat).
  5. Shape into a loaf and place on a foil-lined pan or directly on smoker-safe wire rack.
  6. Brush the loaf with half of the glaze.
  7. Place in smoker and cook for 2–2.5 hours, until internal temp reaches 160°F (71°C).
  8. Brush with remaining glaze halfway through cooking.
  9. During the last 10 minutes, sprinkle shredded cheddar over the top.
  10. Let it melt and bubble into a gooey glaze.
  11. Remove from smoker and let rest for 10 minutes.
  12. Garnish with fresh chives or parsley.
  13. Slice and serve with mashed potatoes, green beans, or cornbread.

Notes

  • For a spicier meatloaf, add more chili powder.
  • Let the meatloaf rest before slicing to retain juices.
  • Experiment with different wood chips for unique flavors.
