A delicious and easy one-pan meal featuring smoked sausage and rice, perfect for a quick dinner.
Ingredients

- 14 oz (400 g) smoked sausage (andouille or kielbasa), sliced into coins
- 1 tbsp olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 3 cloves garlic, minced
- 1 cup long-grain rice (uncooked)
- 2 1/4 cups chicken broth
- 1 can (14 oz / 400 g) diced tomatoes (optional, for a saucier version)
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional, for heat)
- Salt & black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced sausage and cook until browned and slightly crispy. Remove and set aside.
- In the same skillet, add onion and bell peppers. Cook until softened.
- Stir in garlic and cook for 1 minute until fragrant.
- Add uncooked rice to the skillet and stir to coat with the oil and seasonings.
- Mix in smoked paprika, cayenne (if using), salt, and pepper.
- Pour in chicken broth (and tomatoes if using). Stir well, cover, and reduce heat to low.
- Simmer for 20–25 minutes, until rice is tender and liquid is absorbed.
- Stir the cooked sausage back into the rice mixture.
- Garnish with fresh parsley and serve hot as a complete one-pan meal.
Notes
- For a spicier dish, increase the amount of cayenne pepper.
- This recipe can be customized with your favorite vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
