Description

A delicious and hearty Smoky Sausage & Golden Potato Skillet recipe that combines smoked sausage, golden potatoes, and vibrant vegetables for a flavorful meal.


Ingredients

  • 1 lb (450 g) smoked sausage or kielbasa, sliced into ½-inch rounds
  • lbs (700 g) golden or Yukon potatoes, peeled and cubed
  • 1 red bell pepper, diced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp chili flakes (optional for heat)
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat 1 tbsp of olive oil in a large skillet over medium heat.
  2. Add cubed potatoes and cook, stirring occasionally, for 10–12 minutes until golden and partially tender. Season with a pinch of salt and paprika for early flavor layering. Transfer potatoes to a plate and set aside.
  3. In the same skillet, add another tablespoon of olive oil. Add the sliced sausage and cook for 4–5 minutes, until browned and caramelized. Stir in chopped onions, bell peppers, and garlic. Cook for 3–4 minutes, until the veggies soften and release their aroma.
  4. Return the potatoes to the skillet. Sprinkle smoked paprika, oregano, and chili flakes. Stir well to combine, ensuring the potatoes absorb all the flavors. Cook uncovered for another 5–7 minutes, stirring occasionally, until everything is crisp and golden.
  5. Taste and adjust salt and pepper as needed. Garnish generously with fresh parsley before serving. Serve hot — perfect as a main dish or a hearty breakfast skillet.
