- 2 ½ tsp baking powder

- ¾ cup (170g) unsalted butter, softened
- 1 ½ cups (300g) granulated sugar

- 1 cup (240ml) buttermilk
- ½ cup (50g) shredded coconut
- ½ cup (60g) chopped pecans (lightly toasted)
- 2 cups (480ml) milk
- 4 large egg yolks
- ½ cup (100g) sugar
- 3 tbsp cornstarch
- 1 tsp vanilla extract
- 1 tbsp butter
- ½ cup (120ml) heavy cream (whipped)
- 8 oz (225g) cream cheese, softened
- ¼ cup (60g) butter, softened
- 2 ½ cups (300g) powdered sugar
- 1 tsp vanilla extract
- 2 tbsp heavy cream
- ½ cup sweetened shredded coconut
- ½ cup pecan halves or pieces
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy (about 3 minutes).
- Add eggs one at a time, then mix in vanilla.
- Alternate adding dry ingredients and buttermilk until combined.
- Fold in coconut and pecans.
- Divide batter evenly between pans and bake for 25–28 minutes, or until golden and set.
- Cool completely before assembling.
- In a saucepan, heat milk until steaming.
- In a separate bowl, whisk yolks, sugar, and cornstarch.
- Gradually whisk the hot milk into the yolk mixture.
- Return to saucepan and cook over medium heat, stirring constantly until thickened.
- Remove from heat and stir in butter and vanilla.
- Let cool completely, then fold in whipped cream.
- Beat cream cheese and butter together until smooth.
- Add powdered sugar, vanilla, and heavy cream.
- Beat until fluffy and spreadable.
- Place one cake layer on a serving plate.
- Spread the Bavarian cream evenly over the top.
- Add the second layer and cover the entire cake with frosting.
- Sprinkle shredded coconut on top and garnish with pecans.

- For a richer flavor, use full-fat buttermilk.
