Description

A decadent and delightful Snowy Bavarian Bliss Cake featuring layers of moist cake, rich Bavarian cream filling, and a creamy frosting, all topped with coconut and pecans.


Ingredients

  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup (170g) unsalted butter, softened
  • 1 ½ cups (300g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup (240ml) buttermilk
  • ½ cup (50g) shredded coconut
  • ½ cup (60g) chopped pecans (lightly toasted)
  • 2 cups (480ml) milk
  • 4 large egg yolks
  • ½ cup (100g) sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp butter
  • ½ cup (120ml) heavy cream (whipped)
  • 8 oz (225g) cream cheese, softened
  • ¼ cup (60g) butter, softened
  • 2 ½ cups (300g) powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
  • ½ cup sweetened shredded coconut
  • ½ cup pecan halves or pieces

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, then mix in vanilla.
  5. Alternate adding dry ingredients and buttermilk until combined.
  6. Fold in coconut and pecans.
  7. Divide batter evenly between pans and bake for 25–28 minutes, or until golden and set.
  8. Cool completely before assembling.
  9. In a saucepan, heat milk until steaming.
  10. In a separate bowl, whisk yolks, sugar, and cornstarch.
  11. Gradually whisk the hot milk into the yolk mixture.
  12. Return to saucepan and cook over medium heat, stirring constantly until thickened.
  13. Remove from heat and stir in butter and vanilla.
  14. Let cool completely, then fold in whipped cream.
  15. Beat cream cheese and butter together until smooth.
  16. Add powdered sugar, vanilla, and heavy cream.
  17. Beat until fluffy and spreadable.
  18. Place one cake layer on a serving plate.
  19. Spread the Bavarian cream evenly over the top.
  20. Add the second layer and cover the entire cake with frosting.
  21. Sprinkle shredded coconut on top and garnish with pecans.
