Description

Spanakopita Cookies are a delightful twist on the traditional Greek dish, combining flaky pastry with a savory spinach and feta filling.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup (115 g) unsalted butter, softened
  • ½ cup (120 g) Greek yogurt
  • 1 large egg
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 250 g (9 oz) fresh spinach, chopped (or thawed frozen spinach, well drained)
  • ½ cup crumbled feta cheese
  • ¼ cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 1 tsp dried dill (or fresh dill, chopped)
  • Salt & pepper, to taste
  • 1 egg, beaten (for egg wash)
  • Extra feta crumbles
  • Sesame seeds (optional)

Instructions

  1. In a bowl, whisk flour, baking powder, and salt.
  2. Add softened butter and mix until crumbly.
  3. Stir in yogurt and egg until dough comes together.
  4. Wrap in plastic wrap and chill for 30 minutes.
  5. Heat olive oil in a skillet over medium heat.
  6. Sauté onion until soft, then add garlic.
  7. Add spinach and cook until wilted (or warm through if using frozen).
  8. Remove from heat and let cool.
  9. Mix spinach mixture with feta, Parmesan, egg, dill, salt, and pepper.
  10. Preheat oven to 190°C (375°F).
  11. Roll dough into a rectangle, about ¼ inch thick.
  12. Spread spinach-feta filling evenly.
  13. Roll up tightly (like a jelly roll) and slice into 1-inch thick rounds.
  14. Place on a lined baking sheet.
  15. Brush tops with egg wash.
  16. Sprinkle with sesame seeds and extra feta.
  17. Bake for 18–22 minutes, until golden brown.
  18. Enjoy warm as a savory snack, appetizer, or side dish.
