- 1 tsp baking powder
- ½ tsp salt
- ½ cup (115 g) unsalted butter, softened
- ½ cup (120 g) Greek yogurt
- 1 large egg
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 250 g (9 oz) fresh spinach, chopped (or thawed frozen spinach, well drained)
- ½ cup crumbled feta cheese
- ¼ cup grated Parmesan cheese
- 1 egg, lightly beaten
- 1 tsp dried dill (or fresh dill, chopped)
- Salt & pepper, to taste
- 1 egg, beaten (for egg wash)
- Extra feta crumbles
- Sesame seeds (optional)
Instructions
- In a bowl, whisk flour, baking powder, and salt.
- Add softened butter and mix until crumbly.
- Stir in yogurt and egg until dough comes together.
- Wrap in plastic wrap and chill for 30 minutes.
- Heat olive oil in a skillet over medium heat.
- Sauté onion until soft, then add garlic.
- Add spinach and cook until wilted (or warm through if using frozen).
- Remove from heat and let cool.
- Mix spinach mixture with feta, Parmesan, egg, dill, salt, and pepper.
- Preheat oven to 190°C (375°F).
- Roll dough into a rectangle, about ¼ inch thick.
- Spread spinach-feta filling evenly.
- Roll up tightly (like a jelly roll) and slice into 1-inch thick rounds.
- Place on a lined baking sheet.
- Brush tops with egg wash.
- Sprinkle with sesame seeds and extra feta.
- Bake for 18–22 minutes, until golden brown.
- Enjoy warm as a savory snack, appetizer, or side dish.

- For a vegetarian option, ensure the cheeses used are rennet-free.
- These cookies can be made ahead and frozen before baking.
