- ½ cup unsalted butter, very soft
- 1 jar (7 oz) marshmallow creme/fluff
- 1–1½ cups powdered sugar (adjust for consistency)
- 1 tsp vanilla extract
- 1–2 drops pink food coloring
- Pink sparkling sugar (or sanding sugar)
Instructions
- Prepare cake mix (or homemade batter) according to instructions. Line a muffin tin with cupcake liners and fill ⅔ full. Bake as directed (usually 18–20 minutes at 350°F / 175°C). Cool completely.
- In a mixing bowl, beat butter until fluffy. Add marshmallow creme and mix until smooth. Gradually beat in powdered sugar and vanilla until fluffy. Tint with pink food coloring.
- Pipe tall swirls of frosting onto cooled cupcakes to create a “snowball” shape.
- Sprinkle generously with pink sparkling sugar to coat frosting and give a glittery effect.
- Keep chilled until serving for best texture, but bring to room temp before eating for fluffiness.
