Description

Ingredients

  • ½ cup unsalted butter, very soft
  • 1 jar (7 oz) marshmallow creme/fluff
  • 1 cups powdered sugar (adjust for consistency)
  • 1 tsp vanilla extract
  • 12 drops pink food coloring
  • Pink sparkling sugar (or sanding sugar)

Instructions

  1. Prepare cake mix (or homemade batter) according to instructions. Line a muffin tin with cupcake liners and fill ⅔ full. Bake as directed (usually 18–20 minutes at 350°F / 175°C). Cool completely.
  2. In a mixing bowl, beat butter until fluffy. Add marshmallow creme and mix until smooth. Gradually beat in powdered sugar and vanilla until fluffy. Tint with pink food coloring.
  3. Pipe tall swirls of frosting onto cooled cupcakes to create a “snowball” shape.
  4. Sprinkle generously with pink sparkling sugar to coat frosting and give a glittery effect.
  5. Keep chilled until serving for best texture, but bring to room temp before eating for fluffiness.
