A delicious and easy-to-make Spinach & Feta Roll-Up, perfect as an appetizer or snack.
Ingredients

- 500 g all-purpose flour
- 1 packet (7 g) dry yeast
- 1 tsp sugar
- 1 tsp salt
- 250 ml warm milk
- 50 g butter, melted
- 1 egg
- 300 g fresh spinach (or 200 g frozen, thawed and well-drained)
- 200 g feta cheese, crumbled
- 100 g cream cheese (optional, for extra creaminess)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried oregano (or dill)
- Black pepper, to taste
- 1 egg yolk + 1 tbsp milk (for brushing)
- Fresh parsley or dill, chopped (for garnish)
Instructions
- Mix yeast, sugar, and warm milk. Let rest 5 minutes until foamy.
- Add flour, salt, melted butter, and egg. Knead until smooth (8–10 minutes).
- Cover and let rise for 1 hour, until doubled in size. (Skip this step if using puff pastry.)
- Heat olive oil in a pan, sauté onion and garlic until soft.
- Add spinach and cook until wilted (or warmed through if frozen).
- Let cool slightly, then mix with feta, cream cheese, oregano, and black pepper.
- Roll out the dough (or puff pastry) into a large rectangle.
- Spread spinach-feta mixture evenly.
- Roll tightly from the long edge into a log.
- Place on a parchment-lined baking tray, seam side down.
- Preheat oven to 190°C (375°F).
- Brush with egg wash, sprinkle parsley or dill on top.
- Bake 30–35 minutes until golden and cooked through.
- Slice into thick spirals and serve warm as an appetizer, snack, or side dish.
Notes
- For a quicker version, use 1 large sheet of puff pastry instead of making the dough.
- Feel free to add other herbs or spices to the filling for extra flavor.
