Ingredients

  • 2 ¼ tsp active dry yeast (1 packet)
  • ⅓ cup granulated sugar
  • 2 large eggs, room temperature
  • ⅓ cup unsalted butter, melted
  • 4 ½ cups all-purpose flour
  • 1 tsp salt
  • 2 cups fresh strawberries, diced
  • ½ cup granulated sugar (for filling)
  • 2 tbsp cornstarch
  • 1 tsp lemon juice
  • ½ cup softened butter (for filling)
  • ½ cup brown sugar
  • 1 tbsp cinnamon
  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp unsalted butter, softened (for glaze)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 23 tbsp milk (adjust for consistency)

Instructions

  1. In a large bowl, combine warm milk, yeast, and sugar. Let sit for 5–10 minutes until foamy.
  2. Add eggs, melted butter, flour, and salt. Mix until a dough forms.
  3. Knead 8–10 minutes (or with a mixer 5 minutes) until smooth and elastic.
  4. Place in a greased bowl, cover, and let rise for 1–1 ½ hours, until doubled.
  5. In a small saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat until thickened (like jam). Let cool.
  6. Mix softened butter, brown sugar, and cinnamon in a separate bowl.
  7. Roll out dough into a large rectangle (~14×18 in). Spread cinnamon sugar butter mixture evenly. Spread cooled strawberry mixture on top.
  8. Roll dough tightly into a log and cut into 12 rolls.
  9. Place rolls in a greased baking dish. Cover and let rise for 30–45 minutes.
  10. Bake at 350°F (175°C) for 25–30 minutes, until golden brown.
  11. Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and milk. Whisk until creamy.
  12. Spread glaze over warm rolls, sprinkle with extra diced strawberries if desired, and enjoy while gooey and fresh!
