- 2 ¼ tsp active dry yeast (1 packet)
- ⅓ cup granulated sugar
- 2 large eggs, room temperature
- ⅓ cup unsalted butter, melted

- 2 cups fresh strawberries, diced
- ½ cup granulated sugar (for filling)
- 2 tbsp cornstarch
- 1 tsp lemon juice
- ½ cup softened butter (for filling)
- ½ cup brown sugar
- 1 tbsp cinnamon
- 4 oz (115 g) cream cheese, softened
- 2 tbsp unsalted butter, softened (for glaze)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp milk (adjust for consistency)
Instructions
- In a large bowl, combine warm milk, yeast, and sugar. Let sit for 5–10 minutes until foamy.
- Add eggs, melted butter, flour, and salt. Mix until a dough forms.
- Knead 8–10 minutes (or with a mixer 5 minutes) until smooth and elastic.
- Place in a greased bowl, cover, and let rise for 1–1 ½ hours, until doubled.
- In a small saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat until thickened (like jam). Let cool.
- Mix softened butter, brown sugar, and cinnamon in a separate bowl.
- Roll out dough into a large rectangle (~14×18 in). Spread cinnamon sugar butter mixture evenly. Spread cooled strawberry mixture on top.
- Roll dough tightly into a log and cut into 12 rolls.
- Place rolls in a greased baking dish. Cover and let rise for 30–45 minutes.
- Bake at 350°F (175°C) for 25–30 minutes, until golden brown.
- Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and milk. Whisk until creamy.
- Spread glaze over warm rolls, sprinkle with extra diced strawberries if desired, and enjoy while gooey and fresh!
