Description

Deliciously sweet Strawberry Bubblegum Blondies topped with a delightful bubblegum glaze.


Ingredients

  • 1 cup (225 g) unsalted butter, melted
  • 1 ½ cups (300 g) light brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp bubblegum extract (optional, for extra flavor)
  • 2 cups (250 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup strawberry preserves (or strawberry pie filling)
  • ½ cup fresh strawberries, diced
  • ½ cup (65 g) all-purpose flour (for crumble topping)
  • ¼ cup (50 g) sugar (for crumble topping)
  • ¼ cup (55 g) unsalted butter, cold and cubed (for crumble topping)
  • 1 cup (120 g) powdered sugar (for glaze)
  • 12 tbsp milk (for glaze)
  • ½ tsp bubblegum extract (for glaze)
  • Pink food coloring (optional, for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8-inch pan with parchment paper.
  2. In a large bowl, whisk together melted butter and brown sugar until smooth.
  3. Add eggs, vanilla, and bubblegum extract, mixing until combined.
  4. Stir in flour, baking powder, and salt until just incorporated.
  5. Spread half the batter evenly in the prepared pan.
  6. Spread strawberry preserves over the batter.
  7. Sprinkle with diced strawberries.
  8. Spread remaining batter gently over the top (doesn’t need to fully cover).
  9. Mix flour, sugar, and cold butter with a fork or pastry cutter until crumbly.
  10. Sprinkle evenly over blondie batter.
  11. Bake for 30–35 minutes, until golden brown and set. Cool completely before glazing.
  12. In a small bowl, whisk powdered sugar, milk, and bubblegum extract until smooth.
  13. Tint with pink food coloring if desired.
  14. Drizzle glaze over cooled blondies.

Notes

  • For a stronger bubblegum flavor, increase the amount of bubblegum extract.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • These blondies can be frozen for up to 2 months; thaw before serving.
