Delicious strawberry cheesecake cookies that combine the flavors of cheesecake and strawberries in a delightful cookie form.

- 1½ cups (190 g) all-purpose flour
- 2 tbsp cornstarch
- ½ tsp baking powder
- ¼ tsp baking soda
- Pinch of salt
- ½ cup (115 g) unsalted butter, softened
- ¾ cup (150 g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 8 oz (225 g) cream cheese, softened
- ¼ cup (30 g) powdered sugar
- ½ tsp vanilla extract
- ½ cup strawberry jam or preserves
- Fresh strawberry slices for garnish
- Powdered sugar for dusting (optional)
Instructions
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Transfer to a piping bag and refrigerate while preparing the cookie dough.
- In a medium bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla, mixing until combined.
- Gradually add dry ingredients and mix until a soft dough forms. Chill dough for 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll dough into balls (about 2 tbsp each) and place on baking sheet. Use your thumb or the back of a spoon to make an indentation in the center of each ball.
- Spoon a small amount of strawberry jam into each indentation. Pipe cheesecake filling over the jam in a swirl or dollop.
- Bake for 12–14 minutes until edges are set but centers are still soft. Cool completely on the baking sheet.
- Top each cookie with a fresh strawberry slice and dust with powdered sugar if desired. Store in the refrigerator for up to 4 days.
