- For the Filling:
- 170 g (6 oz) cream cheese, softened
- 50 g (¼ cup) granulated sugar
- 1 tsp vanilla extract
- For the Cookies:
- 120 g (½ cup) unsalted butter, softened
- 150 g (¾ cup) granulated sugar
- 50 g (¼ cup) light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 240 g (2 cups) all-purpose flour
- 1 tsp cornstarch
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- Strawberry Swirl:
- 100 g (⅓ cup) strawberry jam or strawberry puree, slightly thickened
Instructions
- Prepare the Filling: In a bowl, beat together the cream cheese, sugar, and vanilla until smooth. Drop spoonfuls (about 1 tsp each) onto a parchment-lined tray. Freeze for at least 30 minutes, until firm.
- Make the Cookie Dough: In a large bowl, beat butter, granulated sugar, and brown sugar until creamy. Mix in the egg and vanilla. In another bowl, whisk flour, cornstarch, baking soda, baking powder, and salt. Gradually add the dry ingredients into the wet mixture until combined.
- Add the Strawberry Swirl: Gently fold in the strawberry jam/puree with a spoon or spatula. Swirl lightly—don’t overmix, you want streaks of strawberry.
- Shape & Fill the Cookies: Scoop about 2 tbsp of dough, flatten slightly. Place a frozen cream cheese ball in the center. Wrap the dough around the filling, sealing completely. Roll gently into a ball. Optional: roll in a little sugar for sparkle.
- Bake: Preheat oven to 180°C (350°F). Place cookies on a lined baking sheet, spaced apart. Bake 11–13 minutes, until edges are set but centers are still soft. Let cool on the sheet for 5 minutes before transferring to a rack.

- Ensure the cream cheese is softened for easy mixing.
- Do not overmix the dough after adding the strawberry swirl to maintain the streaks.
- For a sweeter cookie, consider rolling the dough balls in sugar before baking.
