Description

Delicious Strawberry Crunch Cookies topped with a sweet strawberry crunch for a delightful treat.


Ingredients

  • 1 box strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup white chocolate chips
  • 1/2 cup chopped Golden Oreos
  • 10 Golden Oreos (for topping)
  • 2 tbsp strawberry gelatin powder (or freeze-dried strawberries crushed into powder)
  • 2 tbsp unsalted butter, melted
  • Extra white chocolate chips or cream cheese bits (optional filling)

Instructions

  1. Make the Crunch Topping: Crush Golden Oreos into fine crumbs. Mix with strawberry gelatin powder (or strawberry powder) and melted butter until sandy. Spread on a baking sheet and bake at 350°F (175°C) for 5–7 minutes. Let cool.
  2. Prepare the Cookie Dough: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. In a mixing bowl, combine cake mix, eggs, oil, and vanilla until a soft dough forms. Fold in white chocolate chips and chopped Oreos.
  3. Shape & Bake: Scoop dough into balls (about 2–3 tbsp each). Roll the tops in the strawberry crunch topping. Place on baking sheet, leaving space between each. Bake for 10–12 minutes until set but still soft in the center. Press a few extra white chocolate chips and Oreo pieces on top while warm.
  4. Cool & Enjoy: Let cookies cool on the tray for 5 minutes, then transfer to a wire rack. Serve with milk or package in treat boxes.

  • For a stronger strawberry flavor, use freeze-dried strawberries instead of gelatin powder.
