Description

Delicious and zesty Strawberry Lemonade Swirl Cookies topped with a creamy strawberry lemonade frosting.


Ingredients

  • ½ cup (113 g) unsalted butter, softened
  • ¾ cup (150 g) sugar
  • Zest of 1 large lemon
  • 1 large egg + 1 egg yolk
  • 1½ cups (190 g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract
  • ½ cup (113 g) unsalted butter, softened (for frosting)
  • 3 cups (360 g) powdered sugar
  • 3 tbsp freeze-dried strawberries, crushed into powder
  • 23 tbsp lemon juice (fresh)
  • 1 tsp lemon zest (optional, for extra zing)
  • Extra crushed freeze-dried strawberries (for garnish)
  • Lemon zest curls (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat butter, sugar, and lemon zest until light and fluffy.
  3. Add egg and egg yolk, mixing until smooth. Stir in lemon juice and vanilla.
  4. In another bowl, whisk flour, baking powder, baking soda, and salt.
  5. Gradually mix dry ingredients into wet until combined.
  6. Scoop dough into balls (about 1½ tbsp each) and place on prepared baking sheets.
  7. Flatten slightly with your palm.
  8. Bake for 9–11 minutes, until edges are lightly golden.
  9. Cool completely on a wire rack before frosting.
  10. Beat butter until creamy for the frosting.
  11. Add powdered sugar gradually, followed by crushed strawberry powder, lemon juice, and zest.
  12. Whip until smooth and fluffy.
  13. Spread or pipe frosting generously on cooled cookies.
  14. Swirl lightly with a spoon for a “lemonade swirl” look.
  15. Garnish with extra strawberry bits and lemon zest.

Notes

  • For a stronger lemon flavor, add more lemon zest to the frosting.
  • Store cookies in an airtight container to maintain freshness.
