Delicious and zesty Strawberry Lemonade Swirl Cookies topped with a creamy strawberry lemonade frosting.

- ½ cup (113 g) unsalted butter, softened
- ¾ cup (150 g) sugar
- Zest of 1 large lemon
- 1 large egg + 1 egg yolk
- 1½ cups (190 g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- 1 tbsp lemon juice
- ½ tsp vanilla extract
- ½ cup (113 g) unsalted butter, softened (for frosting)
- 3 cups (360 g) powdered sugar
- 3 tbsp freeze-dried strawberries, crushed into powder
- 2–3 tbsp lemon juice (fresh)
- 1 tsp lemon zest (optional, for extra zing)
- Extra crushed freeze-dried strawberries (for garnish)
- Lemon zest curls (for garnish)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, beat butter, sugar, and lemon zest until light and fluffy.
- Add egg and egg yolk, mixing until smooth. Stir in lemon juice and vanilla.
- In another bowl, whisk flour, baking powder, baking soda, and salt.
- Gradually mix dry ingredients into wet until combined.
- Scoop dough into balls (about 1½ tbsp each) and place on prepared baking sheets.
- Flatten slightly with your palm.
- Bake for 9–11 minutes, until edges are lightly golden.
- Cool completely on a wire rack before frosting.
- Beat butter until creamy for the frosting.
- Add powdered sugar gradually, followed by crushed strawberry powder, lemon juice, and zest.
- Whip until smooth and fluffy.
- Spread or pipe frosting generously on cooled cookies.
- Swirl lightly with a spoon for a “lemonade swirl” look.
- Garnish with extra strawberry bits and lemon zest.
Notes
- For a stronger lemon flavor, add more lemon zest to the frosting.
- Store cookies in an airtight container to maintain freshness.
- These cookies can be frozen for up to 3 months without frosting.
