  • ½ cup (113 g) unsalted butter, softened
  • ½ cup (100 g) sugar
  • 1½ cups (180 g) all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • Orange and yellow food coloring (optional, for peach-like color)
  • 2 tbsp peach jam (for filling)
  • ¼ cup (50 g) sugar (for rolling)
  • Fresh mint leaves (optional, for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Beat butter and sugar until light and fluffy.
  3. Add egg, vanilla, and peach jam; mix until combined.
  4. In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients until a soft dough forms.
  5. Roll dough into small balls (about 1 inch).
  6. Place on the baking sheet, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes, or until set but not browned. Let cool completely.
  8. Pair cookies of similar size together. Spread a thin layer of peach jam between each pair to sandwich them.
  9. Lightly brush the outside with diluted food coloring (if desired for a peach look), then roll in sugar.
  10. Insert small mint leaves at the seam to resemble peach leaves.
  11. Serve immediately or store in an airtight container for up to 3 days.
