- 1 tsp vanilla extract
- ⅓ cup (80 g) smooth peach jam
- ½ cup (113 g) unsalted butter, softened
- ½ cup (100 g) sugar
- 1½ cups (180 g) all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- Orange and yellow food coloring (optional, for peach-like color)
- 2 tbsp peach jam (for filling)
- ¼ cup (50 g) sugar (for rolling)
- Fresh mint leaves (optional, for decoration)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Beat butter and sugar until light and fluffy.
- Add egg, vanilla, and peach jam; mix until combined.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients until a soft dough forms.
- Roll dough into small balls (about 1 inch).
- Place on the baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until set but not browned. Let cool completely.
- Pair cookies of similar size together. Spread a thin layer of peach jam between each pair to sandwich them.
- Lightly brush the outside with diluted food coloring (if desired for a peach look), then roll in sugar.
- Insert small mint leaves at the seam to resemble peach leaves.
- Serve immediately or store in an airtight container for up to 3 days.
Notes
- For a more intense peach flavor, use homemade peach jam.
- These cookies can be decorated with additional toppings if desired.
