Ingredients

Scale
  • 1 lb elbow macaroni (cooked al dente)
  • 4 tbsp butter
  • 4 tbsp flour
  • 4 cups whole milk (warm)
  • 2 cups sharp cheddar cheese (shredded)
  • 1 cup Gruyère or mozzarella cheese
  • ½ cup Parmesan cheese
  • ½ tsp mustard powder
  • ½ tsp smoked paprika
  • Salt & pepper, to taste
  • 2 lobster tails (about 8 oz total), chopped into chunks
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • ½ tsp lemon juice
  • Pinch of paprika
  • 3 filet mignon medallions (about 4 oz each)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme or rosemary

Instructions

  1. Cook pasta until al dente, drain, and set aside.
  2. In a skillet, melt butter and whisk in flour to make a roux.
  3. Gradually add warm milk, whisking until smooth.
  4. Stir in cheddar, Gruyère, and Parmesan until creamy.
  5. Season with mustard powder, paprika, salt, and pepper.
  6. Fold in cooked pasta.
  7. Melt butter in a pan over medium heat.
  8. Add garlic and cook for 30 seconds until fragrant.
  9. Add lobster chunks, paprika, and lemon juice.
  10. Cook 3–4 minutes until opaque. Remove from heat.
  11. Pat steaks dry and season with olive oil, garlic powder, salt, pepper, and thyme.
  12. Heat a skillet over high heat.
  13. Sear steaks for 3–4 minutes per side (for medium rare) or to desired doneness.
  14. Let rest for 5 minutes.
  15. In a cast-iron skillet, spread mac & cheese evenly.
  16. Top with steak medallions and lobster chunks.
  17. Spoon some of the garlic butter from the lobster over the dish.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the mac & cheese.
  • Ensure the lobster is fresh for the best flavor.
  • Let the steak rest before slicing to retain juices.
