Description

A delicious and creamy Surf & Turf Queso Dip featuring chorizo and shrimp, perfect for parties or game day.


Ingredients

Scale
  • 8 oz (225g) fresh chorizo sausage, casings removed
  • 1 lb (450g) shrimp, peeled & deveined
  • 1 tbsp butter
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • Salt & pepper, to taste
  • 1 tbsp olive oil
  • ½ small onion, finely diced
  • 1 small red bell pepper, finely diced
  • 1 jalapeño, minced (optional for heat)
  • 1 clove garlic, minced
  • 1 cup (240ml) heavy cream OR half & half
  • 8 oz (225g) cream cheese, softened & cubed
  • 8 oz (225g) shredded Monterey Jack
  • 8 oz (225g) shredded Cheddar
  • ¼ tsp cumin
  • ¼ tsp paprika
  • Salt to taste
  • Handful chopped cilantro (optional)
  • Tortilla chips, for serving
  • Lime wedges, for serving

Instructions

  1. Place chorizo in a skillet over medium heat. Break apart and cook until browned + crispy. Remove and set aside (leave some of the flavorful oil in the pan).
  2. Season shrimp with paprika, chili powder, salt, and pepper. In the same skillet, melt butter. Cook shrimp 1–2 min per side until just pink. Remove and set aside.
  3. In the same skillet, add a little olive oil if needed. Sauté onion, bell pepper & jalapeño for 3–4 min. Add garlic and cook for 30 sec. Pour in heavy cream, then add cream cheese cubes. Stir until melted. Add Monterey Jack + Cheddar, stirring until silky. Season with cumin, paprika, and salt. Stir in some chopped cilantro if desired.
  4. Pour queso into a warm serving dish or cast iron pan. Add spoonfuls of chorizo and shrimp across the surface. Sprinkle fresh cilantro on top. Serve immediately with tortilla chips.

Notes

  • For extra heat, keep the seeds in the jalapeño.
  • Can substitute half & half with heavy cream for a richer dip.
  • Serve with lime wedges for added flavor.
